Amsterdam / Belgium
 
I have booked a 6 night trip to Amsterdam and Belgium in February. I was thinking about spending 2 nights in Amsterdam, 3 nights in Bruges (with day trips to Ghent and maybe Antwerp) and one night in Brussels.

Im wondering if I should do 3 nights in Amsterdam, 2 Bruges and 1 Brussels?

I can only address part of your question.
3 nights were not enough for me in Amsterdam.

Maybe consider Ghent instead of Bruges and daytrip to Bruges

You don't say where you are flying from. If you are flying from a long distance and will likely be experiencing jet lag, I would opt for a much longer stay in Amsterdam. We spent about 5 nights there (took one day trip) and found plenty to do.

If it were me, I would do more Brussels, and less Bruges.

Thank you all for responding. I am flying from New York and have decided to stay 3 nights in Amsterdam.

You could stop in Antwerp for a day on your way to Brugge; put your luggage in a locker and walk to the old town, have lunch and return to the station to continue to Brugge.
The station itself is quite beautiful. It's a 15 minute walk from there to the cathedral and old part of Antwerp.
