I'm not sure what your price range is so I will assume 2 star. We just stayed at Hotel Agora on Singel. I posted to the rant/rave section in some detail as well as here. It's basic, but the breakfast and the people are great! There is a newly managed Waterfront Hotel next door that looked nice too. At a higher price level in the same central area is Hotel Esthera. There is also a Golden Tulip Hotel on Singel [this is a good central area for everything.] -- it looks out of place -- but I tell you -- after 3 days of climbing canal house staircases... well an elevator sounds nice:)

Eating? We did the "rice table" at Kantjil en de Tijger -- we thought it was pretty ordinary. We had a delicious meal at Van Puffelen. Again I posted on rants/raves on this site about Van Puffelen.

Hope this helps!

Recommend the Canal House or the Esphera,Canal cheaper. I did not like the Indonesian cuisine. There are many ethnic restaurants on the Singel or streets surrounding this canal.

We stayed at the Park Hotel (located next to the Riks (sp?) and Van Gogh museums. There is a boat service across the street from the hotel that took us for a nice ride on the canals. We were there only over night, so we ate in the hotel dinning room (which was very good). Take an umbrella.
If you are going right now, Kukenhof (sp?) Gardens is a very easy half-day trip out of Amsterdam.

You won't want to miss the Tulips -- even if you're not that into flowers.
