I'll assume your budget is for two. Lunch at Le Grand Véfour is prix fixe @ €98 p/p. Wine, of course, is extra but you will be able to find something nice by the glass/half bottle/full bottle for under €100. Make a reservation well in advance. http://www.grand-vefour.com/reservation.html

Paris has hundreds of good restaurants, it's Paris after all. If you want to dump some Euros, then head to Aida (Japanese), 1 rue Pierre Leroux in the 7th. Dinner will set you back at least €160/person, not including wine.
If Japanese-French cuisine doesn't fit your taste, then try L'Ambroisie in the 4th, about €360/person.
Le Carré des Feuillants (southwest cuisine) will only set you back €145 (lunch) to €205 (dinner) per person, wine is extra. They do offer a fix-price lunch menu at only €60/person €95 with wine.
Pierre Gagnaire in the 8th has a lunch menu for only €110/person, dinner menu is €280 each. Again, wine is extra unless you want the tasting menu which is about €380/person.
And of course Le Jules Vernes (Alain Ducasse) is right up there, but not quite as expensive as the tasting menu at Arpège in the 7th.
Thankfully Alain Ducasse's Au Plaza Athénée is closed for renovation or you would certainly break your budget.

Restaurant Lasserre was hardly ever on any affordable lists but is certainly a formidable place to have a wonderful enchanting dinner. Is no longer three star but is in my opinion one of the most beautiful restaurants in the world.

Le Grand Vefour is totally worth the money..such a wonderful experience. The service is top, the food is magnificent, and the decor is historic.
Another less expensive restaurant I always go to is Epin Dupain. Beautifully prepared food, crowded, so reserve in advance.
For a splurge, Robuchon, is incredible. Reserve and have an evening of imaginative food, thoughtful service. Don't be discouraged to be seated at the bar..most people are. I was there for a big birthday and it was memorable. When they found out it was my bday, I left with a box of chocolate.
