Airline and Hotel Reservations

My husband and I are planning on vacationing the first two weeks of September this year to Paris, Venice, Rome, & Florence. Could anyone please give me some suggestions as to when I should start booking the airline and hotel reservations? I have been researching and reading all the forum responses and have found many helpful hints. From anyone's experience, is there a certain time of the year where special rates or deals are offered that maybe I should look into? Are set package deals better than planning things individually?

I haven't been to Italy so can only
comment on Paris--Sept is rather busy
as it's the beginning of the business
travel season, but not as bad as early Oct
when Paris is VERY full and there are a
lot of conventions. I usually book a hotel
in Paris about two months ahead because
I go at quasi-busy times and I have a
particular hotel I want, as well as a particular
few rooms/view in this hotel and 2 mo. ahead
has been fine for summer. However, the
hotel I stay at in Paris is not mentioned in
most guidebooks and not popular with tourists,
so it is not as difficult to get a room as some
hotels. So, I'd go with 2 months to be
sure you get what you want--if you pick
a hotel mentioned in every popular
guidebook, that's probably not early
enough. Airfares usually drop to Europe
after Labor Day, I believe, but many popular
flights at popular times get booked pretty full.
They know these lower rates ahead of time,
it's std for Sept to lower fares, so I'm
not talking about special last-minute fare
wars--you could book these as soon as you
know your dates and get a lower fare
than summer. Packages (air+hotel) often can get
you pretty good deals if you find a hotel you
want--but not so outstanding as to choose that
over booking your own hotel if you don't care
for the package choice. There are special
times of year to get very good deals, but
Sept isn't it--it's the winter, esp Nov, Jan and Feb.
(BTW, a word of advice if you post more on
this board, you will get better response if
your post is as specific as possible in
the short space for the title--ie, "When reserve
for Sept in France/Italy?" would have been
better, or something like that). Many
people, like myself, who frequent this
board only read posts that are of interest
to us and/or we know something about.
Often, I won't even read posts with very
general subjects.)
