Advice on cell phone/options while traveling

We are traveling to Scandinavia this July (Sweden, Norway and Iceland) for just under 3 weeks. We are a Verizon family since we live in the sticks and don't get reliable service anywhere else. We want to travel with our iPhone 6 and 6 plus along with a iPad air 2. Our phones are unlocked per VZ and we could put a different SIM card while in Scandinavia. All of our hotels will have WIFI...
Our needs are: some calls within the countries.. unlikely need to call to the US, will want to upload photos from camera to iPad or iPhone but can do that via WIFI, and research etc while in the countries on Internet. We can do most of the research on wifi at the hotels but sure would be nice to be able to look something up when not at the hotel and sightseeing.

Some people have recommended VIBER so the two of can call each other if needed. I would prefer not to have anything to do with the VZ international plan.

Any other recommendations for cell phone (SIM), data providers etc while traveling given our above requirements would be greatly appreciated. AND if this misplaced and should be in a different forum I will repost.
