Advice on 10 day Portugal trip itinerary over Easter

Dear Fodors Forums Experts,

I am a long follower of your advice and have benefited greatly. I have prepared a tentative itinerary to Portugal based on very basic research. We will be 7 of us (2 people above 70 years old, 4 people between 35-45 years, and 1 kid).

We like UNESCO world heritage sites, we like quaint towns, and a little bit of history/museums etc are good. We are not much the beach type. Driving in beautiful countryside is something we like. Food is important to us, though i suppose it will be a bit tough because we are vegetarians. We dont like to cram our day too much, plus given the age differences between parents and children, it is going to be a bit difficult to be strictly on schedule, so a relaxed agenda is probably more sensible.

I look forward to any comments you may have. Also recommendations for apartments or hotels in Lisbon and Porto. Thanks in advance!
