I was feeling nostalgic and decided to take a peek at this thread again. Thanks to everyone for the beautiful replies!

@klondike - I really couldn't figure out a way to "surprise" her so I ended up just telling her. This was probably for the best since it gave her a chance to buy a wedding dress she wanted.

@AGulizio12 - my apologies for not responding back to you sooner. I really did not expect very many people to read this thread once my trip was over. I do hope your trip was everything you wanted and more.
