We, seniors, were on Samos about 2 years ago and enjoyed it. We only had two days but rented a motor scooter. Yes, they can be dangerous but we were very careful and thoroughly enjoyed it. The only negative was that it was in April and very windy.
We went over the hill to the charming port of Pythagorio (14 Km) then back across to Hora and the tiny village of Pirgos where we bought cheese, crackers, fruit, etc for a picnic in the town square. Going on over the mountain to Karlovas was steep, then back along the coast to Samos town. All the way the scenery was great. We were sorry there was not time do the rest of the island. There is a local bus that would probably take you around the entire island, hopefully letting you stop along the way.
With that much time you might consider taking the ferry over to Patmos for at least a day or even over night. Check one or more guide books about what is there. If you are on your own you need to do some amount of homework before going.
Places to eat on both islands are stretched all along the water front, some better than others.
