A quiet(ish) resort with beaches and culture

For a 'cultural experience' on-site, look at The Buccaneer Resort on St Croix. It has been family-owned for generations. Was a sugar plantation, then a cattle ranch, now a family-run lovely, little resort.
Excellent service. The owner hosts a cocktail party each week, and she will take those who are interested on a history walk around the property. It has three beaches. One smallish pool with a simple bar & grill.
Food is very good. Nothing extreme in presentation, but a very nice hot/cold breakfast buffet, served on the big house open porch, where you're overlooking the water and the gorgeous property. They will make eggs and pancakes to order, also. Breakfast is INCLUDED. It's a wonderful start to the day.
Also a waterside bar & grill which is quite good, and has special dinners some nights, like local lobster grill. They are really sweet.
Finally, there's a full-on restaurant at the big house, too. They offer complimentary wine tastings, etc.
Snorkel trips to Buck Island pick up right at the resort. It's a must-do, if you snorkel. Buccaneer provides free snorkel gear. Also kayaks. Some of our family took scuba lessons and then went on one or two scuba divers.
We rented a car for one day. Very easy to do through the resort. They bring the car to you and you return it to the hotel. You can practically circumnavigate the island in a day. It has the easternmost point of any US territory. Also great beaches and colorful little open-air cafes, to grab a burger.

PS. Note, there is a good variety of lodging types. We had reserved three double rooms in the big house, but they upgraded us to three oceanfront double suites. Which were fabulous. Right at the water, with private patio. Huge rooms. Newly done bathrooms, bar, etc. Pristinely clean.
Also, look at the house they own and rent, on the top of the hill. Gorgeous pool. Really swanky. I think there's an adjunct suite or two, for couples' lodging.

Yes, of course. That didn't occur to me. We went ages ago when the only tourists that were allowed were Canadians and Russians (at least, I think we were the only ones; we were the only ones there). The rules were very strict at that time. You had to stay with your tour group, that is, not venture out on your own. And it had to be five days in Varedaro, with only one resort available to the Canadians and another for the Russians, and two days in Havana. You weren't allowed to take pictures of anything military and that included statues and schools. Still, our tour guide was a past professor of history and he was very knowledgeable and interesting and Havana was fascinating. And the beach was the best I'd ever been on.
OK, so now I'm tossing Cuba back into the mix!
