Well I know now that wine is not served gratis anywhere en route! I too have never taken the Chocolate Train so do not know when or who the cheese is served - just sometime during the course of the excursion. Thanks for your corrections as I always seek to portray the correct info.

To clarify: As I understand the official brochure, the cheese is not exactly 'served' - you can sample some cheese during/after the cheesemaking demonstration in Gruyeres. That's it. No cheese on the train.

We were in Switzerland in September; Zermatt was our least favorite city, so I too am thinking you should skip that town, especially since you are going in ski season. Lucerne and Lausanne will be lovely bases from which to explore.
