7 minutes to change trains in Florence???
 
I booked a trip from Chiusi to Pisa and now that we're about to leave, I realized the website gave me 2 train segments that only have a 7 minute switchover in Florence? Is this even doable?

Making the change is possible if the first train is on time.

I suggest you check the schedule to see when the next train to Pisa would be so you can anticipate the delay and be ready for whatever happens.

There are trains from Florence to Pisa every 15 to 30 minutes so you can hop on the next train if you don't make your connection.

Probably not since a lot of trains in Italy seem to run a few minutes late (although it may be doable if you have no luggage and jog briskly). But as noted - you can just hop on the next one.

In the future, you don't need to book R trains in advance. You can just buy them when you get to the station since there are no reserved seats. There are more restrictions to R tickets purchased on the internet than at the station.

The station in Florence is an end station, so the trains pull in and back out (some stations are through stations). If your first train is on time, you should be able to hop on your next train.

Be ready to jump on in Chiusi. It's likely your train will only stop there for a minute or two (even if it says 6 minutes online). It's a through station.
