At the risk of stating something obvious, I'd really recommend getting at least one guidebook for each city. A series like "Let's Go" (I'm sure others too) offer a quick overview and suggested daily itineraries for all different kinds of interests.

These are just a few quick Dublin suggestions based on what you've said you like, I've tried to go for things you might not find in a guide book;

Afternoon coffee in Cafe en Seine - the decor is a bit of a talking point, and the last time I was there on a sunday afternoon they had a harpist playing

Stroll past the Huguenot cemetery on Merrion Row - the gates are usually locked, but you can see in through them, it's very charming

The Iveagh Gardens - I prefer this to Stephen's Green

Walk along the Grand Canal - bring some bread for the ducks and swans

Have a drink in Neary's Pub

Wander around the small shopping streets to the west of Grafton Street

Book dinner on the barge restaurant La Peniche - it does a canal cruise for dinner every night, sets off from Mespil Road

Chester Beatty Library in Dublin Castle

Cram yourself into the smallest pub in Dublin - The Dawson Lounge

Paris is one of my favorite cities on earth and I think you're really shortchanging yourself by not spending more time there. Once you experience the atmosphere of the city you'll hate that you'll have to leave so early.

I've also been to Amsterdam, being a younger guy it definitely has its fun points, but all in all it was kind of a disappointment...I'd skip that if I were you. You said you've been there before and in my opinion there really aren't a lot of "must-sees" in Amsterdam, especially when compared to Paris/London/Dublin.

But since your itinerary is all planned then enjoy and don't let anyone get ya down!
