The only time I'd consider changing to a hotel from a B&B the last night is to move from Locanda Orseolo to Al Ponte Antico, both run by same family. Otherwise I like the idea of staying put in a B&B or even apartment.

Walking and walking -- like along the Zattere -- early and late -- remains best Venice experience IMO.
