I really appreciate all the replies here.
But I guess the more I read, the more confused I become :)
I think I have made up my mind as mentioned in my previous post.
I can make minor modifications but nothing major.
Cape Sounion is somewhere I just want to go, that's it.

I have booked 2 guided tours and a trip to Cape Sounion.
Thanks for all the help.

A quick question about taxi from/to the airport - Should I book in advance from some place like George's taxi?
Or, there are registered taxis from the airport ? Please suggest

Since you seem set on seeing Sounion, would it work on the way to/fro the airport which is relatively close and probably halfway there from mid-city Athens? In the interest of saving all too little time, you can do Konalaki the Benaki, and Mt. Lebettus in one day (we picked Sunday) especially since you're nearby at the Electra Palace. The views from Mt. L are wonderful for a perspective on the city, hopefully a clear day. While the Lalounis Museum is a treat and only a block behind the Acropolis Museum, doesnt need more than 30-45 miinutes, his jewelry is still featured in certain magazines not that I can afford any. Don't see why you need a tour of either the Acropolis or its Museum, copy pages from guides and bring w you, The Museum has everything well labelled. Yes, the National Archeological Museum is a wonder, we did the first floor in about 90 minutes which was all we could handle that day but it is spectacular. Arrange for flat-rate taxi to/fro, they leech on tourists upon pickup there for fees back to inner city (and yes, you need to taxi to/fro there, not the best area of town)

There is a taxi rank right outside Arrivals at Athens Airport with a fixed fare for taxis to take you to central Athens. I've never seen the point of paying extra for a driver to meet you at Arrivals and hold up a hand-printed sign with your name on it.

Athens has an excellent public transport system, there is no place in Athens that can't be reached either with a bus - trolley bus or the metro system.
You just have to know how to use it. Driving in Athens is a madness even for Athenians anyway, since parking is almost impossible in the wider centre area or you will have to pay
exorbitant prices for a garage.

Our first trip to Greece we stayed 2 nights in Delphi, I am so glad we did
Our last trip to Greece we took a day trip to Myceane Corinth & Nafplio & loved it
I thought Cape Sounion was a yawn
We have stayed in The Plaka several times & love it.
Enjoy Greece is a wonderful place

A four-hour food tour (10 - 2) seems awfully long, especially for your 11-year-old. Presumedly you're stopping for lunch, which should break it up.

Lots of helpful suggestions on here that I will use too. At the end of the day, do you. You know what you like. I wished I had an extra day in Athens but seeing Meteora was important to me. So we decided on a day trip there. Will be long but every review even for day trips said that it was worth it and with a driver picking up/dropping off at the hotel, we can just relax.Your itinerary looks fun.

I give a second to Heimdall's idea of the Athens-Walks food tour. It was excellent and filling. We had the owner, Kostas, as our guide. It took one morning.

3 Days in Athens
 
I would drop Delphi and spend more time in Athens. It is a fascinating city. The museum at the foot of the Acropolis w well worth a morning.
