3-5 day backpacking trek in Alps (Italy/Southern Switzerland)

I am going to be visiting the region (into Rome out of Venice) for a 3 week trip and I am looking into doing the Tour De Mont Blanc. I am looking for another epic adventure hike that is between 3-5 days long and allows camping. I am looking for more adventurous stuff and not so much touristy paved walks etc.

Needless to say, the time of year matters a lot when it comes to trekking in the Alps.

Since you are leaving from Venice, it would probably be easier to get to the spectacular Dolomiti or the very untouristy and wonderful Julian Alps in the northeast corner of Italy, bordering Austria and Slovenia. Have you considered these?
