I think less is more in general, but you still haven't explain the reasoning behind your choices. For example if archeological sites, history, museums, getting in the rhythm of everyday life is your motivation, no, the best part of Greece for that might not be the islands! Athens or some parts of mainland might have much more to offer than the islands on that aspect. So depending on your priorities, you may or may not include Greece on the itinerary.
