dress attire on celebirty cruise ship
I will be going on a cruise in March with my father. We both have NO desire to dress up and since i am going with my dad we would not want to participate in formal nights. My questions is, is it possible to go on an 11-day cruise and not have to dress up once, since I don’t want to waste luggage space on dress clothes? We want this to be a relaxing vacation, as we have to dress up for work every day and would like a vacation from that!!

On an 11 day cruise, expect 2 formal nights and usually they are during sea days.
You do not need to dress formal if you eat elsewhere (not the main dining room). You can have room service as well. Some Celebrity ships will set up a small area at the buffet for the formal nights and you can eat there (they do table service), but you will miss out on the 'show" like the parade of the baked Alaska etc. Usually they do that, and the lobster dinner on the formal nights.
Formal is not really all that formal anymore. A jacket and tie for the men and for the ladies, any type of evening or cocktail dress is more than sufficeint. No jeans or t-shirts is really what they meant for formal nights, although you will see other people over dressed for the occassion.
I have seen men without a jacket so I wouldn't worry too much. You probably will never see the other passengers (or crew) for the rest of your life so there is no need to feel embrassed if you don't "dress up". They also have rentals available (but expensive).
Correction: if you cruise regularly, and on the same cruise line, you may come across some crew members over time. Unless you do something that is truly memorable (or lives on the ship), they won't remember you as they met thousands of passenegrs weekly and over the course of a year, they would have met over 150,000 passengers.
We were on the same ship twice over the course of 3 years and we recognized the Matri'd (but not the service staff as they have 6 to 9 month rotation contracts). Did he remember us? not even close.
So, no worries and don't be embrassed if you do not dress up as much as every one else.

i am not worried about being as dressed up as others, i am worried if i still have choices of eatries if my outfit consists of a polo shirt and cargo shorts, since that is all i plan on wearing for the whole trip!!

You can be pretty relaxed most of the time, but formal nights in the dining room do require at least a jacket for men. If you do not wear one on formal night, the staff will either quietly or laughingly provide one, depending on your reaction - from very recent personal experience.

You can do it but on Celebrity you might have to get room service on a couple of formal nights. When I go onebag.com
1 pair of casual dark cargo pants slacks 1 decent shirt with a tie rolled up in the pocket. Otherwise cargo pants.Cangetsuper chilly at nite rain pancho or sport jacket for that.Will get VERY cold in just shorts when sun goes down and rain breeze kicks up.

Well on Celebrity on formal nights u will just have to try alternate venues. On our X cruise last Oct. a man came to dinner on formal night w/o a jacket and they provided him with one though it was way too big so they put it on the back of his chair.

Travel4425, shorts won't work in the dining room at all, even on regular dinner nights. The expectation is "smart casual" or "country club casual" whatever that menas. (Those ugly baggy plaid pattern golf pants came to mind?)
They will allow shorts for breakfast and lunch (and we have breakfast and lunch at the dining room rather than the buffet as the coffee is better and the food is portioned so you won't over eat).
One pair of dress slack is not going to take up that much room in the suitcase. Besides, conmsidering that the ship is air-conditioned, a pair of long pants may not be a bad idea.

But getting back to the OP it would be advisable to get some casual slacks like Chinos or khakis at least. Then you are fine for the MDR except on formal night.

Basically in a nut shell, i could care less about the cruise ship itself. The only reason i am going on this cruise is that it allows be to be at many different countries in a short amount of time. As far as i am concerned the ship is a floating Las Vegas (which i am not a fan of by the way). I will be seeing 6 counties in central and South America. If i were to visit these countries individually is would cost a fortune. That is why i want to put as little effort while on the boat as possible.

If you are looking for a floating Vegas on the Celebrity, you will be disappointed
Celebrity is more resort like, nothing glizy or showy like NCL or Carnival. You will enjoy the quiet places you will find on board and this little boat may surprise it. By the way, they have real grass on the sports deck where the golf simulators are located. Want more surprises?
Tell the ship you are celebrating your BD while on baord when you book the passage and they will make it specail and memorable, then you are hooked on crusing.
