Best Cruise Line/Ship for Service/Food in Caribbean? PLEASE HELP!!!!

I've been reading a lot about the different cruise lines that travel to the Caribbean. I'm looking for some of the best / top notch cruise lines and ships that travel for 6 - 7 nights to the Caribbean out of Florida. We are looking to go in April.
We have no kids
We are going as a newly married couple with my parents to celebrate family b-days (my 30th and mom's 60th) My parents are very active.
We like fine dining, excellent service, rooms with balconys, casinos, restaurants, bars and do not care about anything for children. Good spa would be nice too!!!

Looking for Eastern Caribbean (or western, if the ship is more desireable) but southern would most likely require sailing out of PR or some other island and we need to leave from FL.

Please share !! We are looking for a fabulous time with great service and food and decor and spacious rooms and do not care about kids activities!

Thanks!!

Laura, it would be Seabourn!!!
This is a 6* line.....and everything you'd like!

You can also look into Radisson.

I agree with the previous posters...Seabourn or Radisson are your best options. You will be pleased with either line. (Radisson has been having some 2 for 1 pricing specials you might look into. Not sure of any of the dates.)

If money is no object agree with above. However these lines are elite and very expensive. Is there a price range?

Don't overlook Silversea. Their ships are larger than those of Seabourn, with real balconies and a real swimming pool. Silversea is as good as it gets. But Radisson is not far behind.
