Young Couples (Late 20s) in the Dominican Republic

Hello! I'm looking for some advice on AI resorts for three young couples (late 20s) in the Dominican Republic. The three lovely ladies are all elementary teachers and will be traveling during Easter Break, between April 5 - 11. We are looking for adults only (since we will need a break from the kids!) and something under 300/night. Hoping that some more experienced fodors travelers know some hidden gems with great foods, pools, and beaches that won't break our bank! So far, we have been considering the Punta Cana Princess. Does anyone have any input on this resort?
