tripadvisor.com - absolute best site to research your hotel...
sidestep.com - for me, consistently finds the best airfares, hotel rates, and car rental rates out there.

wheretostay.com - very good site to use for narrowing down your search if you're not familiar with an island. Easy to use, with pix, traveler reviews, etc.

Tradewindtours.com is helpful in finding good rates at smaller Caribbean hotels.

P.S. I recently discovered a GREAT site for researching & booking all-inclusives (the more upscale ones) -- www.roadslesstaken.com. It's one of the best-organized travel sites I've ever seen, and they respond very prompty and personally to quote requests.
