One day in St. Lucia
We have one day in St. Lucia. What's the best way to see the Island? How do I get the best view & photos of the Pitons? Should we get a Taxi for the day? Should I arrange for a Catamaran cruise around the island? Any advice would be helpful.

I would suggest a day sail with the Brig Unicorn -- a replica of the ship used in the mini-series Roots. Didn't do this one but did do their night sail and it was spectacular. They sail out of Vigie Harbor which is in Castries and right near the port. Try a text search but I believe the day sail includes snorkeling, drinks, and lunch and sails south via the west coast to the pitons.
A catamaran would probably be similar but they're usually more rowdy and you wouldn't have the ambiance of the Brig. But again, if this appeals to you, try a text search for this also.
I wouldn't get a taxi unless you want to see a lot more of the island. They're very expensive and it takes a long time to get from one point to another due to twisting and winding roads. The long drive could get cumbersome as well. Some people have commented that the drive (particularly once you get to the south) is nauseating although I never thought so. I'm somewhat adventureous.

Mary, this time YOU are posting twice 
I agree that a day sail is the best way, however I would choose to sail with the comapny that leaves from teh Hyatt. When we went on it there were only about 10 of us, from 4 different countries. It was the highlight of trip, not only the sail but meeting such neat people. One was an american woman who meet a local man on a previous vacation, fell in Love and moved to St. Lucia to marry him
The Brig Unicrn was very crowded with many, many, children.
We did do the Unicorn trip Sunset cruise which was very nice
