I agree there are several hotels (in varying price range) on Grace Bay and it would be perfect for you and your mother. It may be a bit cooler from Dec-March so you may want to keep that in mind.

When are you going and what's your budget?

Expensive - Anguilla
Moderate to Expensive - Provo, Turks and Caicos
Moderate - Negril, JA
Inexpensive - Isla Mujeres or Tulum, Mexico, or Punta Cana, Dominican Republic

When my mother and I were looking at taking a trip together, two places near the top of the list were Jamaica Inn in Jamaica at Malliouhana on Anguilla. JI is almost universally praised, both here and at tripadvisor. Malliouhana was offering basically a 2 room for 1 special for immediate family members traveling together, which also sounded good.

We ended up not doing either because my husband then joined us and I combined a birthday trip with my mother with a research trip for him and we went to Antigua instead. But if my mother and I ever do go get a chance to travel to the Caribbean on our own, I would still seriously consider JI and Malli.

You could also consider the Bucuti on Aruba. It's a very nice resort on an awesome stretch of beach. Pool is poor but I have never minded since the beach is so great. Also, they cater to honeymooners and adults so the beach is very peaceful.

Lots of nearby casinos if you gamble, too.
