In Ocho Rios, Jamaica, there is a resort called Enchanted Gardens. IT had been closed for a bit for renovations but beleive it is open again, however there is very little on the web about this resort. It is not luxurious but truely the most beautiful, tropical and lush resort we have been too. The entire resort is built on the hills (use to be botanical gardens of Ocho Rios) and waterfalls, which start at the top, run throughout. You can climb and swim in them. IT is a very laid back, relaing and for the money, terrific resort.

I do have pictures - just email me for the site.

if the Caribbean is not necessary than the Maui Hyatt's pool is just AMAZING... many waterfalls and even caves that you can swim into ...right in the pool!!!

Sam,
Just so you don't keep getting slammed about waterfalls....
Try google.com ask which resorts in the Caribbean have pool waterfalls....
It may help you narrow down. Also, try talking to a travel agent, they have brochures on the Caribbean that highlight such things as what you are looking for. But, let me stress, unless you plan on USING a travel agent, don't use the latter suggestion. You will not get a welcome reception if you are gonna pick their brains, then book direct. They cannot keep their doors open giving out free info.

That WAS NOT meant to be ugly. Just stating, my travel agent has tons of knowledge on the Caribbean, and I wouldn't think of taking her time and knowledge and using it against her. Book an airline ticket on the net, or just a hotel or whatever. For specialized things like you are asking, nothing is more valuable than first hand experience.

And no, I am not a travel agent. Just someone who wants them to be around so I can use them when I choose.
Have to agree with Julie, the Hyatt in Maui, yes I know not in the Caribbean, but a wonderful pool with waterfalls you swim up under to get to the swim up bar and is also accessible by foot. Several nooks to swim over to and linger with your special one, and bridge that crosses over, it is a really beautiful pool and the grounds around it are fantastic as well.
