Is there still a quiet spot in the Caribbean or Latin America?

This isn't in the Caribbean, but the island of Roatan (Honduras) was amazing! Not quite what you would expect, as you tend to only hear the bad things about Honduras. I went by myself in April to meet up with a wedding party and had no issues. Most people spoke English, Spanish or French. The beaches were secluded off season (except cruise days) and it was a great place for snorkling & diving. We didn't stay in the resort, but my friend went for a visit and said it was beautiful.

sorry, my 2nd post got up before my first somehow. oops!! I was trying to tell you about Dominica, which is the epitome of a "quiet spot" in the Caribbean. It is called "The Nature Island" and remains undiscovered by most. All properties are below 80 rooms, most are below 20. Good places to stay close to the beach include Calibishe Lodges and Picard Beach Hotel. Also if you are into snorkeling and diving try Sunset Bay Club & Dive Resort. Get information on the island, hotels and activities at www.DiscoverDominica.com. This place is very highly rated by people who have gone there, and its affordable! Unfortunately Fodors does not have a guide, but like I said, it's still undiscovered!
