Ill Describe Us-which Resort should we go to?
Going with husband for 1 week without our 4 & 1 yo....for past 10 years have gone solely to cap Juluca, cuisinart & malli on Anguilla & st. Barts as well..But we are looking for something different. Love gorgeous near-empty beaches, beautiful surroundings, great food, dont need nightlife, cant stand anything remotely touristy, prefer upscale clientele, but very low/key/unpretentious type of atmosphere, not so 'sceny' at the same time we need 'infrastructure' like a great fitness center, Internet access (for my work, fax machine etc.) & love marble-like fancy accomodations-have looked into a few places & the rooms seem sort of 'blah'....? Any advice. Prob. dont want to spend more than 900/night.... ideas?

Spice Island Resort grenada? Maroma in Mexico? I havent been to either - but my husband and I have similar likes (when we can get away alone) and those are 2 on our radar - we went to 4 seasons in Costa Rica and that was great (and pretty easy to get to flying MIA to liberia)

you could look at the somerset on provo, turks & caicos.
maroma beach hotel on maya riviera coast south of cancun.
one and only ocean club on paradise island in bahamas is spectacular.
anse chastanet or perhaps the hilltop dream suite at ladera - st. lucia. both very unusual hotels.

"cant stand anything remotely touristy". Really? Perhaps you should clarify what you mean by that. Because I'm pretty sure that it's only tourists, not locals, who are staying at places like Cap, Cuisinart, and Malli.
For upscale clientele in a low key atmosphere, I can recommend Guana Island, a private island in the British Virgins. Or possibly La Luna on Grenada. But to me, lowkey doesn't equal marble and fancy accommodations and these are definitely not fancy... When I first read your post and thought your children were accompanying you, I also thought of Spice Island, like the previous poster. But after reading your post more carefully, I don't think it would suit you.
I've no personal experience with the following, but I think they might suit you:
--Biras Creek on Virgin Gorda
--Parrot Caye, a private island in Turks & Caicos
--Amanyara on Provo in Turks & Caicos
I guess in short I think some of your post is contradictory. But maybe I don't understand what you mean by "remotely touristy." It sounds on the surface that you want all of the trappings of a high end luxurious location (great food, low occupancy, marble furnishings, privacy, great beach, great fitness center, and internet access), but not necessarily the kind of guest who usually stays at such places?
So, why not just rent a fully staffed villa?

You might like Harbour Island in the Bahamas...Pink Sands comes to mind. The beach is gorgeous and there are some pretty good restaurants.
May not be upscale enough for you but for an island with good food, not touristy, good beaches...you might also like the Buccaneer on St. Croix but you'd have to reserve a Doubloon to get the luxury you want. And I doubt it's as upscale as Cap Juluca, etc.
