I stayed at Tainos in January of 2001 and found no problems with the resort. The food was good in the main cafeteria style restaurant. There is also a smaller intimate dinner restaurant down the hall from the main cafeteria. You need reservations for this which can be obtained from the front desk. It's really great so I would suggest you do this.
Pool is nice and divided so their is a kids area and an adult/general area which helps keep the small ones out of your way. Ocean is also nice.
You're out nearer the end of the Varadero peninsular so it is a few bucks to get to town by cab. There is also a bus, but 4 of us split a cab for the convenience. Also we rented scooters several days and they are a blast to toodle around on and do your sightseeing.
At the resort, there are low rise (2 story) bungalows around the pool area and also a high-rise tower. I had a room in the tower and other than a slow elevator at times the room was very nice, clean and LOTS of hot water at any time.
I don't think you can go too far wrong at this resort, but I will note that my info is based on a stay 3 years before your planned arrival.
While in Varadero, plan to see Parque Retiro Josone. It is a very nice large park located between Calles 54 y 59. It is a very pleasant place to spend an afternoon, have lunch and a nice cold cerveza.
    Have fun and enjoy Cuba.
    Steve
