high end long weekend beach vacation for 50+ New Yorker
Searching for a beautiful hotel with pool and beach within walking distance to restaurants and stores where someone traveling alone will feel comfortable. Ideas welcomed.

Check out The Somerset or Regent Palms on Turks & Caicos ( airport code PLS) Direct flights from NYC, great restaurants within walking distance from both, wonderful spa at the Palms,
beautiful condos at either. We have stayed at both.

When you say "long weekend" what exactly do you mean? also, how much time from that weekend are you willing to devote to travel?
You have to realize that when traveling from NYC anything in the Caribbean is going to take you at least 4 hours flying time (3 1/2 to the Bahamas) assuming you choose a major island reachable non-stop. Some of the smaller islands will take lot longer.
If you are going in late spring or summer consider Bermuda - it's less than 3 hours flying time from NYC. Otherwise confine your search to resorts on the larger Bahama Islands, Providenciales in the Turks & Caicos, San Juan, the Dominican Republic and St. Thomas - all have relatively short travel times.
With that in mind for high end properties (you didn't say how "high end" you wanted) with relatively short travel times check out:
One & Only - Nassau, Bahamas
Amanyara, Providenciales (Turks & Caicos)
Casa de Campo, Dominican Republic
Ritz Carlton, San Juan, Puerto Rico
Ritz Carlton, St. Thomas
Caneel Bay, St. John (requires a ferry ride from St. Thomas)

Ritz Carlton, Grand Cayman. Lovely pools, great restaurants, the spa is above and beyond fantastic. Walking distance to a few stores and restaurants near the hotel. The lounge (forgot the name) has some amazing sushi.

The adult only hotel section of Grace Bay Club should meet your needs
Direct flight from NY
Gorgeous long walking beach
Walkable to numerous terrific restaurants (Coyabas, coco bistro, anaconda ) and small shopping strips and supermarket.
Gorgeous adult only pool, infinity, very nice. The sister properties next to it have swim up bars and cabanas
One of the worlds best beaches
