When you get to Eleuthera, ask any of the cab drivers for suggestions, not sure where SAvannah Sound is on Eleuthera, I'll look that up, but if you were planning on going over to Harbour Island, there are several captains that offer half and full day fishing trips.
If you are flying into N. Eleuthera ask for Wendell, a local cab driver and he knows everything about Eleuthera. If you go over to Harbour Island find Reggie and he can make the best suggestions for you.
Also ask at your hotel for suggestions as well.

Just looked at a map of Eleuthera and you are probably flying into Governours Harbour or Rock Sound Airport, Savannah Sound is just about midway between the 2 airports.
www.eleu.net is the website for Eleuthera and will have just about everything you will need to know about the island.

I just found this info from the place we are staying on Eleuthera:

I'm not sure if it is up and running but check it out as it's closer to where you will be than Harbour Island.

Beachgirl both suggestions are great if the poster was closer, but both HI and Cape Eleuthera will be almost a day's drive from Savanah Sound. Probably the closest options will be in the Govenours Harbour or James Cistern area.
If you have not been to Eleuthera before, it is still a pretty sleepy island, and not alot of tourist amentiies are there quite yet.
The website I listed above, www.eleu.net is probably the best info on the island and agregates information for you.
The other website for Harbour Island if you are heading up that way is www.briland.com and www.myharbourisland.com.
You will need to rent a car onisland to get anywhere, so check with your hotel or home owner on suggestions in the area.
I think there is a car rental spot near Govenours Harbour Airport. You will need CASH, no credit cards.
Only a few places on island take credit cards, most perfer cash.
