Bushwacker recipe
 
To Susan, Penny and any one who is interested. I enjoyed this at my sister's home.

This is from the Caribbean cookbook bought in Cruz Bay. Drink originated in Antigua

1 ounce dark rum
1 ounce coconut rum
1 ounce Bailey`s Irish Cream liqueur
1 ounce chocolate liquer
crushed ice
nutmeg
Fill a blender with slightly less than 1 cup of crushed ice. Add all ingredients except the nutmeg and blend until an ice cream consistency is attained. Sprinkle with ground nutmeg.

Thanks Penny, I printed your thoughts about Jumby and have included them in my take-along folder, where I have placed other Forderites commentaries of interesting sights and places to go on the island I am staying. I enjoy reading them on the plane or beach and it helps in my stay plan-making.

I know I will love Jumby. I have not alotted enough time there, (4 days), but it will give me a reason to return.

Thanks Diane for the recipe. I already told this bartendar at this one restaurant we usually go to here in NJ about this drink. Now I can tell them how to make it. The only thing I noticed is that the Bushwacker drinks at Caneel said that they had "amaretto, vodka, baileys, and kahlua". So perhpas they had a different version? I wonder if they taste the same? I guess I will have to find out by making this and trying it for myself! -Susan

I've looked at (and sampled) a lot of Bushwhacker recipes and the one posted by Dianebridle is the first I've seen that did not include Kahlua. Amaretto is frequently used, but not always. If vodka is used it is usually in place of the rum.

Also, many recipes call for a little more Bailey's than anything else - say 2 ounces in this example. If you use Kahlua and Bailey's you don't need chocolate liqueur.

So basically I would change the Bailey's to 2 ounces, replace the chocolate liqueur with Kahlua, and maybe throw in a little Amaretto if I had some handy.

But first I'd find a designated driver.
