I've not stayed at Blue Waters, but I've had lunch there and toured the property. The beach there is pretty but on the smaller side. On my visit the food was good but not great and the service was pleasant--either of these things could have changed since my visit in 2002.
I think Blue Waters is a very pretty property, nicely landscaped. The rooms are pleasant but most of them were a little bit of a walk to the beach.
I'm not sure what you're looking for and what your price range might be, but during the offseason, in addition to Blue Waters (which could be just right for you), also take a look at Nisbet on Nevis and Jamaica Inn on Jamaica. These last two properties have a tremendous following on this travel board as well as others. All three places offer a certain amount of luxury and creature comforts but they're not in the highest tier of price or luxury. They all have their strengths.
