I am looking for a moderately priced resort that features swimming, tennis, horseback riding, and is scenic within 2 hours or less of Toronto.

You could try the Georgian Bay area - it is very pretty. Have been to Thornbury (near Collingwood) many times to stay at a friend's cottage.<BR><BR>

I too have heard great things about Deerhurst in Hunstville. Believe it or not, you can get it through priceline by selecting "resort" quality. Of course, you might also get the Delta Grandview or the Holiday Inn resort which sound nice, too. I was very excited to try my luck on Priceline for this upcoming weekend in the Huntsville area, but alas, there was no availability at these resorts when I checked prior to bidding (due to the 3 day weekend). Huntsville is very close to Algonquin Park if you are interested in that as well. Hope this helps!
