Niagara Falls Advise

After reading hundreds of forums on this site and others I'm still undecided on how we should spend our days in and around Niagara. Briefly we are a married couple in our early 60's visiting in early November. We will arrive at BUF midday Saturday and depart mid afternoon on Thursday. Planning to rent a car. As of now we plan to stay the afternoon and night of arrival on the U.S. side and then drive over the Rainbow Bridge Sunday morning. We currently have reservations at the Fallsview Hilton on Sun. and Mon. night. We are thinking of driving up to Niagara on the Lake Tuesday morning and stay there for two nights, returning to BUF on Thursday in time for our afternoon return flight. My question is, considering the time of year and possible cold weather (we are native Floridians) do you suggest we change our planned itenerary? We aren't big gamers, so the casinos aren't a draw. We mostly enjoy sightseeing, maybe visiting a few wineries and/or mico breweries, gardens and just hanging out. I've heard NOL isn't as desireable in the winter. Maybe we should only spend one day there. Suggestions please.
