I guess you are heading to Whistler in the next few weeks? If so, you will see fall colours on the trees. There is always snow on the mountain top and it is worth it to take the chair lift to the top of the mountain on a nice day. The view is beautiful. There are lots of great restaurant in Whisterl... would not eat Japanese there because the Japanese restaurants in Vancouver is so much better. Check out Araxi, Rim Rock Cafe, Quattro (Italian). These are a few of my favourites.

Vancouver Magazine published an article about some of Whistler's restaurants - you may be interested in reading it:

http://www.vanmag.com/diningout/default.html

Try Sushi Village. More expensive than in Vancouver, but quite good. Go early or make reservations if you don't like to wait. It's in the heart of the village on the 2nd floor of a building towards the gondola.

About the whole sushi scene, in reality, sushi in Vancouver is possibly the cheapest in North America, and I'd only assume Whistler, while being a bit more expensive than Vancouver, is still pretty cheap compared to other sushi restaurants on the continent.
