Planning second trip to Australia- suggestions for new adventures!

We will be going to Sydney for a wedding in October 2016. We also would like to visit some new places in Australia- Adelaide and the North Coast with a new Jungle adventure , if possible. We have been to Tasmania- loved it, Melbourne, Sydney and the GBR. Any suggestions for the North near Darwin for a new adventure?
We would also like, if time, to stop at a Pacific Island for R&R on the way home to the West Coast of the US. We are thinking of anyplace that Quantas flies for all this!
