Off The Beaten Path South Pacific Ideas

Hello. My wife and I leave for India in 2 weeks. We have been traveling around the world for 22 months now, and Australia and Oceana is a portion of the final part of our 2.5 year journey. We're looking for any advice that anyone is willing to offer us. We continuously scour forums for ideas. We don't particularly like big cities and enjoy non-touristy, off-the-beaten path places.
