Need help organizing a vacation to Australia, we are a couple with 3 kids

Hi, my husband and I are planning a trip to Sydney, Australia with our 3 kids...ages 10, 8, 3. We are planning on going during the Christmas holiday and will be staying with close family we have there. However since we are staying for a few weeks, I would like to plan a nice vacation while I'm there to a "beach" area just for my husband and I and our three kids. Can anyone recommend a fun or "a have to see" place to go that we are all going to enjoy. We will not be returning anytime soon after this trip, so I want to get most of our vacation while I'm there. Also, I forgot to mention, we are stopping in Los Angeles, California on our way to Sydney to stay overnight, can anyone recommend anything to do or see for the day?
