hotel options in Melbourne

I'm beginning to research hotel options for our visit to Melbourne in January and need your advice. We are looking at the Park Hyatt, Intercontinental, and Langham. All of them seem fine and very similar. Do any of these stand out for you? Are there any historic heritage hotels that we should consider as well as those are usually our favorites? Bottom line, we want something comfortable and walkable, with nearby shops and restaurants. Thanks for your help.
