Darwin Accomodations

I am planning a trip to Darwin (coming from the USA) with my husband and 2 friends in mid August. My husband and I have not been in the area in 30 years (so might as well say it's our first adventure) and my friends not at all. We will spend about 3nts in the Darwin area and 2 in Katherine before moving onto Kununurra and Broom. Because budget is not necessarily an issue and we want this to be a special occasion, I was wondering for anyone who has been to the area recently, which are the newest hotels and which do you find to be the nicest. Would enjoy one that has a fitness center and spacious rooms.

Also, can anyone give us some information on some nice hiking trails (not the most strenuous but pretty scenery) in the Katherine area.
