There is no shortage of things to see and do on that stretch of coast. Coffs Harbour and Byron Bay should suit you.
The campervan and motorhome club (CMCA) will be able to give you advice on where to stay. They are certifying many "RV Friendly Towns" these are towns with good facilicities and cheapor free places to stay in a van. If you plan to be in Australia for a long time then CampsAustralia Wide is invaluable as it maps the free and cheap places to camp.
Remember - Freedom camping is part of our culture. You don'thaveto stay in Caravan Parks.

There have been a lot of posts here warning against Wicked campers ... just so you know. Otherwise enjoy your stay - it's a stretch with some lovely coastal towns. You might also like Forster-Tuncurry, another town further south than the Coffs - Byron district.
