Urgent Help! Overnights from Sydney

I should know this stuff, but I'm drawing a blank. Mom's here visiting and we want to go away for a night or two somewhere within 2-3 hour drive of Sydney. She hates wine (I can't believe I'm her kid given my love of the stuff) so the Hunter Valley is out. She liked the South Coast, so maybe back there?

Suggestions of specific places to stay would be great. She's more of a "resort" person than B&B, but all options will be appreciated!

How about Port Stephens / Nelson Bay? You could stay at Anchorage Peppers Resort,or the new Landmark Resort - you could find some good deals on the internet. Or there is always the Blue Mountains - the Hydro Majestic if she's into the old art deco stuff, or the Fairmont Resort if she prefers it more modern ...... Caves House at Jenolan Caves if you're interested in that...

If you / she like golfing, there are some lovely resorts down Bowral way ..

Hope you have fun!

How about south to Berry - there seem to be endless varieties of restaurants and B & B/ Hotel type accomodation in that area.

Perhaps a little further than 3 hours but how about Canberra? The Hyatt is really nice and they serve a ripper High Tea. You could go to the revolving restaurant on the mountain for dinner (I've forgotten the name of the restaurant) and tour paliament house/war memorial/national gallery. Stop in at beautiful Bowral on the way there or back.
