Yes, absolutely, without the slightest shadow of doubt, the Park Hyatt. But make sure you ask for a room with a clear view of Fort Denison. That means you will be looking straight down the harbour, with the Opera House on the right and the green shores of Cremorne and Tarnga Zoo on the left. Wow! (How about inviting me in for a quick look?)

Not in order.
1. Manly Ferry to Manly Wharf, then a short walk to the oceanside beach.
2. Walk from Circular Quay to the Opera House, boggle at that for a while, then continue around Farm Cove and out to Mrs. MacQuarie's Chair. Return through the Botanic Gardens. Linger until sunset so you get the full cockatoo- and bat-invasion experience. When you're back in Circular Quay, have an ice cream.
3. Walking tour of The Rocks. Lunch is a pint and a kangaroo pizza at The Australian Heritage Hotel. I would recommend a stop at the lovely little Susannah Place House Museum nearby. Time it so sunset finds you on the back side of The Rocks, following the tour posted by Alan in this forum some time ago: catch the light on the back side of the Bridge. More pints in the Hero of Waterloo and or the Lord Nelson. Return around under the bridge at the point.
4. If you can afford the Park Hyatt, you can certainly afford to actually see an opera at the Opera House! Otherwise, I can't help you with spectacular restaurants and entertainment options, but I know they have them.
5. Taronga Zoo -- cable car up, walk down. Bring your camera; Australian law requires that every tourist MUST take at least one photograph of the giraffe with the Opera House in the background! Leave plenty of time to just sit and wait in the Platypus house; they're shy.

And don't forget you can run a search on this forum for past threads that will have more detailed suggestions. Also, the official Australia tourist site www.australia.com, plus whatever else you pick up by running a web search on sydney +tourism, will be useful.

The Bridge Walk is not for the faint of heart. You're really far up there. For the acrophobic (including myself) the fact that you're roped together and couldn't fall if you jumped is no comfort. Others think it's the greatest thing ever.
For me, a simple walk across was plenty spectacular. The area on the other side is a pleasant stroll, too, and you can hop the train back -- One stop to Wynyard.
There's also a tower climb, where you can go up in the near right tower for the view at considerably less cost than the Bridge Climb. A lot of stairs, though.

I can't find Alan's original post with his back side of the rocks tour, but you really should wander over there. Go under the bridge near the Australian Hotel, enjoy the park there, walk around the Lower Fort Street area and admire some of the very old houses, take a look at the wharf area, and come back around the point under the bridge.
There, that's the short version that misses half the sights!

The Park Hyatt is a must for great views and a beautiful hotel. As for things to do...if you want a good look at the beaches and local residential areas, why not catch a bus from Wynyard Bus Station to Palm Beach. It is a beautiful bus ride and only costs about AUD$5-6 each one way or you can get a day tripper. The bus to catch would be an L90.
You could also do a ghost walk around The Rocks, which I have been told is quite good.
Another way of seeing the city is by catching a ferry from Circular Quay to Manly. The views are amazing!
