Hi, Klangner!
Now, there's really not much to separate these two, so don't spend too much time over it. Certainly, Jamison St is closer to the Rocks and Circular Quay than the Grace Hotel... but we're only talking a five-minute walk, as both, really, are quite well-placed. Jamison St is in an area which is mainly offices, the financial area of Sydney, so it's very quiet after business hours. The Grace is closer to the main shopping malls, in a narrow but quite busy street where you find many small specialist shops (a block further down is George Street, the main shopping street of Sydney, where the major department stores are situated). I don't know anything about the quality of the rooms in either hotel, but I can tell you that the Grace Hotel is a lovely old building, from the art deco days, looking like it belongs in New York rather than Sydney. I can't remember what the Rydges looks like -- certainly not a landmark like the Grace, but, I'm sure, up to Rydges' usual standard of finish. There are more eateries around the Grace area (lots of budget places underneath the main stores); however, Jamison Sty is closer to the many upmarket (and highly-priced) restaurants in the Rocks. Happy choosing!
