You might see what you can find in Paddington or Balmain - both are a little out of the way but Paddington has buses (for example, anything running down Oxford St or the 389, which goes through the lovely Five Ways neighbourhood) and Balmain is connected by buses and ferries. For Paddington one possibility would be the Hughenden, a small private hotel at the top of Queen St Woollahra. I can't speak to its quality as accommodation as I live in Sydney so never need to stay in hotels. Otherwise see what is available on AirBnB. Both Paddington and Balmain are pretty neighbourhoods with interesting shopping possibilities and markets on Saturdays, while Paddington additionally has many art galleries if you plunge into its belly and leave Oxford St (essential if you want to see the lovely terrace houses, ditto for Balmain). Further east of Paddington there is also the massive Centennial Park if you are into that sort of thing.
