In my experience NZ is pretty much cashless. However I would do a small currency exchange when you first arrive at Auckland Airport if time (or Wellington). You can pay with cash at many places even some taxis will take cash if you can't update your Uber account in time (Auckand does Uber, don't know about Wellington but sounds like your colleagues will be around). See this link about getting from Wellington Airport into town, it's quite a distance. Looks like cash or contactless payment both work.

Google Pay and or Apple Pay are both used there but I don't know if yours will...Good Luck!
