NZ consists of two main islands and a few small ones.

It's difficult to help you with such vague questions.

Perhaps you should start with a guidebook, or a map. Then come back when you've at least decided which island you want to visit and where you might fly into.

With your wish list I suggest you begin with the South Island. Queenstown has a lot of what you're interested in on offer.
