Mossman, Adelaide and Sydney with a three yr old, any tips?

Hi
Just found these forums. Im originally from Adelaide now living in the US and were going back for a three week holiday in May.
5 days in Mossman / Daintree
10 days in Adelaide
5 days in Sydney.

We have a three yr old boy and want to find fun things for us to do in these places. We have no plans so far pretty much just hanging out and seeing what happens.
I want to go up to the Mossman Gorge one day and the Daintree rainforest as well as the beaches. I think he might get fussy and noisy on guided tours.

Adelaide I'm thinking Cleland one day with a trip to the Clarendon bakery.
Maybe the Belair national park and adventure playground another day (if they still have it)
Ride the trains and wander around Rundle Mall another.

Sydney I'd like to go to the Taronga zoo.

Apart from that were pretty much open to ideas, he likes gadgets and dirt and things he can get his hands on rather than looking at animals. Any ideas for fun family things to do in these places?

Cheers

Have you been to Kangaroo Island? Your little one should love it.

I went once when i was young however I'm concerned that its more travel and watching things than playing and getting into trouble for him :)
