I like Bali in the less touristed season -- March to May (but avoid Easter week) and September-October (but avoid the Islamic holidays) are to me the best times to avoid jacked up prices and overwrought attractions.
My two favorite destinations would be Seminyak and Ubud. Seminyak for an international beach resort ambience. Ubud for nature and culture.
Let us know your price target for hotel as "moderate" can mean different things. Again, if you choose July/August and December you will pay high-season penalties.
In Seminyak I like the Royal Beach Seminyak (formerly the Sofitel). You might also look at the many, many villas in the area. Prices are variable. Not right on the beach, but close.
In Ubud there are tons of mid-range choices. The Komen group is very good. I also like Alam Sari. Alila if you can work a deal.

the link for travel weather was interesting...the only time i'll be able to go is dec/jan...i know no one can predict and lots of folks have had good experiences during the rainy season...but do the experienced here think the rainy season is too risky, ie the likelihood of rain keeping you trapped in room, unable to enjoy the outdoors is too high to make the expense during the high holiday season a bit dicey?

All the times I have been to this area (Bali, Java, Lombok) have been in Nov-Dec. Yes, there were brief but intense rain showers or thunderstorms every day. Did it keep me trapped in my room? Not a chance. Yes, you want to be under shelter when it's pouring, but that is a relatively short time. I enjoyed sitting on my covered balcony in Lombok during the rain, I swam in the rain, and when out touring, we might wait until the hardest rain had passed to get out of the car, but we had umbrellas and we had a fine time.
