What island to visit while visiting HongKong
Going to Hong Kong Mid October would like to take a short side trip no longer than a 2 hour plane ride for a couple of days. A location where it is picturesque, things to do, weather is good, economical , and safe. We are in our late 50's. Also suggestions names for accommodations hotels or Airbnb. Thanks

Taiwan is a fine idea, but I would want more than a couple of days there. Your description of what you are looking for is so general, it doesn't really help narrow it down.
There are, of course, many islands in Hong Kong, which can give you a glimpse of less urban life.
As you have no doubt discovered, hotels in Hong Kong are the most expensive in Asia. The one "bargain" is the Salisbury. It has its own website or you can book it on one of the booking engines like Booking.com or agoda.com.
Another idea is to go to Macau for a couple of days. Yes, the Chinese go there to gamble, but there are lovely historic areas (it was previously Portuguese) and even a black sand beach. The food there is very good, and everything - hotels, food, shopping - is less expensive than Hong Kong. And it's only an hour's hydrofoil ride away.
You have an interesting array of options.

I second Macau. The historical section is truly fascinating. There is a mix of colonial buildings from the Portuguese, along with Chinese temples. Plus, the Portuguese/Chinese fusion food is fabulous. We went for the day, and did a very long walking tour, but I would have enjoyed staying longer.
Kathie is correct, the hydrofoils go at least twice an hour. Be sure and take your passport.
We also enjoyed Cheung Chau Island, which is also very close to Hong Kong via boat. It is quieter and smaller than Macau, but equally as fascinating, with fabulous seafood.
