My two favorite restaurants in Singapore are Doc Cheng's in Raffles Hotel and Les Amis au Jardin (French) in the Botanical Gardens. There are so many fabulous restuarants in Singapore!

Try these:
1) Pierside Kitchen & Bar, #01-01, 1 Fullerton Square, 1, Fullerton Road. Next to the Marina/ merlion for outside dining , or sit inside to enjoy the eames chairs.
2) Esmirada: #01-17 Chijmes, 30 Victoria Street. Situated in teh old Convent School next to Raffles Hotel. Great to sit outside. Order the Garlic bread.
3) Au Jardin: EJH Corner House, Singapore Botanic Garden Visitors Center, 1, Cluny Road. French Food opened by Spore's top restaurant Les Amis. You won't forget this place, or the price!
4) Blue Ginger: 97, Tanjong Pagar Road.
Not easy to find but great Peranakan Food ( a Local sub culture, mix of malay and chinese traditions)
5) Da Paulo (Italian) or Au Petit Salut (French) at Chip Bee Gardens, next to Holland Village. Go for their set lunches at SGD $22, its a STEAL.

I beileve the original question was regarding local cuisine. You can try eating local food in hotel or proper restaurants but the best way to enjoy local cuisine is to eat at a hawker stall. The popular and biggest one is at Newton Circus. Hawker stalls are kiosks that sell chinese, malay and indian food in an open air market.

Another place to check out is UDMC seafood center in east coast. A must try if you like seafood is singapore's famous chilli crab or pepper crab.
