Restaurants in Cambodia, Vietnam and Bangkok

We are going on a tour for Vietnam and Cambodia and on our own in Bangkok. In each location we have several evenings on our own as follows:

Phonom Penh - 1 night
Siem Reap - 1 night
Ho Chi Minh Citry - 1 night
Hoi An - 2 nights
Hanoi - 1 night
Bangkok - 4 nights

Rather than wing it I would like suggestions for restaurants. We like good food but does not have to be 5* unless there is a "must not miss." Also would like local atmosphere for some.

You are all the experts and I trust your opinions. Also if I need advance reservations anyplace i will do before we leave Los Angeles.

Phonem Penh..Romdeng, in a colonial mansion. delicious food, excellent, best part is that it is one of the Friends group that hires street kids, traqins and hires them towork in thr restaurants, a win win for all. Can't say enough about thisei place.
Hanoi..Ly Club, went twice, delicious, great service.
Saigon..drinks at the rooftop bar at the REX Hotel, a must.

Haven in Siem Reap. When kids age out of orphanages they take them in and teach them to be chefs. Check out their web page. You eat good and feel good afterwards because you helped make a difference.
